The secret to making good shortbread is to employing a best quality butter and pure vanilla extract. Butter in the States is graded based on flavor, color, texture, aroma and body and one simple way to tell the quality of the butter is by the letter code or numerical number noted on the butter’s package. The highest level is AA (93 score), then A (92 score), pursued by B (90 score). Buying vanilla extract can also be different as there are so much choices. The first task is to make sure that it is labeled “pure”.

• 3/4 cup butter, softened
• 1/4 cup sugar
• 2 cups all purpose flour

Heat oven to 350 degrees. Stir butter and sugar in large bowl. Mix in flour. If dough is crumbly, stir in another 1 to 2 tablespoons of softened butter.
Roll dough to 1/2 inch thickness and cut dough with cookie cutters into desired shapes. The dough can even be cut with a knife into wedges or strips for interesting designs. Bake about 20 minutes or until firm. Remove from oven and transfer to a wire rack to cool.

1 cup butter
1 cup white sugar
1 egg
2 2/3 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons vanilla extract
Directions
1.In a big bowl, cream together the butter and white sugar until light and fluffy. Beat in the egg, then Mix in the vanilla. Combine the flour and salt; Stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets.
2.Preheat stove to 400 degrees F (200 degrees C). Press dough out onto ungreased, chilled cookie sheets.
3.Bake for 8 to 10 minutes in the preheated oven, or until lightly brown at the edges. Take them off the cookie sheets to cool on wire racks.
